Hugo’s custom passive grease traps are designed to be used in restaurants and commercial food preparation areas. They hold and slow the flow of wastewater containing fat, oil, and grease (FOG) before it reaches the sewer giving it time to cool. As the water cools, the FOG separates and floats to the top. The positioning of the internal baffles can further reduce the flow of wastewater from kitchen sinks or other wastewater outlets. Solids settle on the bottom of the tank and the cleaner/cooler water flows out of the trap into the sewage system.
